I made apricot jam last year and canned the leftover apricots with out sugar, would I be able to make wine from it? Any suggestions?

I made some Apricot wine last year. I started with 3 gallons of Steamed Juice.(about 40#'s). Now since there is little water in apricots I woule use 5-7#'s per gallon. How much do you have?
 
I have 3 or 4 quart jars of jam consistency apricots. I ran out of sugar so I just canned what I had left without adding anything to it. I was thinking of making a 1 gallon batch.
 
should work as long as you didnt add sorbate. Make the gravity no higher than 1.085 and add pectic enzyme
