Three months ago I put 35+ gallons of blackberry and blueberry in a secondary fermentation barrell. I attempted to make this reicpie drier than I'm used to. The wine has a good clear color to it now but has a strong alcahol smell but the alcahol taste has dissipated some. It tested around 13% when the fermentation was finished. Is this common to dry wines is it a patience issue with the maker?
