alcahol taste

Hi all:


Three months ago I put 35+ gallons of blackberry and blueberry in a secondary fermentation barrell. I attempted to make this reicpie drier than I'm used to. The wine has a good clear color to it now but has a strong alcahol smell but the alcahol taste has dissipated some. It tested around 13% when the fermentation was finished. Is this common to dry wines is it a patience issue with the maker?
 
I don't really call 13% a high alcohol wine but the more alcohol the
wine has the less nose it will have.Also it can over power the taste of
the wine. Let it bulk age a long while it should improve. The higher
the alcohol,tanin,or sugar, the longer the wine will age with no ill
effects. If you add sugar to your recipe next time add more fruit
instead. Maybe some one with more knowledge than me will give you a
reply.
 
Erin, my '02 and '03 Blackberry both have 13% and the longer they age, the better they are. Some of it has oak, some made fruitier, but the one thing it all has in common is getting better and better. PATIENCE.

of the state do you live in, I can't remember. I have a bottle of my
muscadine stuck back for you. I did have some apple but my

uncles thought it tasted too good on new years and now I'm down to one
bottle I had hidden (lol). The hangover they had the next day made them
pay for it though. Oh yeah I'm in Rison 24 miles south of Pine Bluff.

I've been up there a few times. I pretty country, I like going to
Greer's Ferry. When I was a member of the AGBA we had our meetings
there.

Greers Ferry Lake is very nice and we spend quite a few weekends up there in warm weather, May - September. I don't fish much, mostly sit in the shade with a cold beverage and watch the kids fight. After a few cold beverages, sometimes I take a short swim.
 
LOL! I can't help it I'm a fishing nut crappie and walleye are my
favorite to eat but I only fish for them in the fall, winter and
spring. In the summer I bass fish for fun and a few tournaments. My son
won't let me go without him now, so I guess I've got a fishing partner
for a few years.
