Hello, I just got done bottling my cab (Estate) and getting ready to bottle my Pinot (estate). My question is how long can I age these wines? I did add extra sulphite like they insisted. However, I would like to take 5 bottles of each batch and age them for years, is this possible?

It is certainly possible to age these wine for years with the added sulfite but the key to long term aging in addition to the proper alcohol content, pH, and level of sulfite is conditions. The better the conditions the longer you can successfully age the wine.


Great conditions include:
Stable (without fluctuations) cool temperature 56-57 degrees is a good target. Darkness and lack of vibrations.


All wines have a limit where they will continue to get better and ultimately start to decline even with the best conditions.
