when the recipe calls for x amount of water and add y amount of sugar,do you just add the sugar to the water and stir, or add sugar to heated water to dissolve??t
 
I boil the water then add the sugar, bring back to a boil and stir till clear. Then measure that and add. remember, you dont need much water to dissolve sugar. Then if not enough then add just water. Also, mix well before adding the yeast.
 
While I agree with Tepe that this the standard winemaking practice. Something about inverting the sugar and making it more readily available to the yeast. However, I have rarely boiled the sugar. I just make darned sure it is well-dissolved and that I am getting an accurate SG measurement prior to pitching the yeast. All my fruit wines have been quite successful using this method.
