3G batch fermentation in 7.9G bucket

I've recently picked up four 3G carboys. If I wanted to make three gallon batches of wine (like the Dragon Blood wine), can I still use the 7.9G fermentation bucket even with that much headspace? I know fermentation creates a lot of CO2 and that protects it in primary fermentation, but I'm not sure if it's still okay at 3G instead of 6G.

Or should I look at finding a smaller fermentation bucket?

It's fine, just rack out of bucket @ 1.00-1.002 SP into 3 Gal carboy.
 
Having a lot of head space during fermentation is actually a good thing. That's the one time you don't have to worry about O2 exposure, because the yeast actually NEED O2 to build the colony and do their business.
