    Peach wine Haze

I have had a peach wine (all fruit) bulk aging for about 18 months now and want to bottle soon but it still has a haze to it. Fermentation to dry went off without a hitch. I used lallyzme Cmax for enzyme , should i add some more enzyme to try to clear it up? If so how much per gal? Sorry...

Early drinking vs. Longer term aging of wines

What are the characteristics that differentiate between the two? Is it ph, tannins, brix? What is it that I should look for that will tell me to let a particular wine sit for 5+yrs or to just drink it at 1yr? Mainly I'm talking about. Reds, but I. Know some whites like chardonnay...

    Chromatography

Uggh. I left my chromatography paper in the solution for a week! What are the odds that it is OK? My gut tells me to do it again and not forget it:h

    Too much kmeta

Just finished MLF on my 6 gal of pinot noir. ph 3.65. had a brain fart and added 1/2 tsp kmeta. my calculator says I should have 35 ppm. my SC300 shows that I am at 95ppm. I plan on bulk aging for at least 1 yr. should I just let it ride as is? and let it deplete over time and racking...

    MLF when to start?

I didn't want to hijack the other 2 MLF threads, so Here is my question: When do you generally inoculate with mlb? I've got a chardonnay bucket going that is currently at 3 brix(1.012sg) my readings have been decreasing by 2-3 brix/day and i'm thinking I should probably inoculate today or...

    1 yr anniversary

Today is the one year anniversary of my wine making obsession. 10/27/2013 the wife brought home a bucket of cab juice(no skins) and announced " We're going to make wine!" 3 more kits and I've progressed to frozen must of pinot noir, chardonnay and chenin blanc. I also have a peach wine going...

My first attempt at red wine with grapes

Hi all, I'm going to attempt my first red wine with MLF. I don't have a crusher/destemmer yet so I figure it will be best to try frozen buckets first. I've decided to do a Pinot Noir (2 buckets) from Wine grapes direct and I have 2 choices: 2012 PINOT NOIR Sonoma Coast, Price Family...

WineXpert WE selection Italian Pinot Grigio bulk aging

I plan to bulk age this kit for around 6 months (give or take). Should I do the degassing and use clearing agents just after fermentation, or do I wait and let it clear and degas by itself , then use the clearing agents before bottling? Btw I'm new here and have learned a ton from just...

    Mlf and wine kits

I've noticed that I don't seem to see discussion on Mlf in the forums regarding wine kits. Am I just not seeing the threads or is there something about kits that this does not need to be done? I've read some info at UC Davis on Mlf and understand somewhat on why you would want to do this for...
