I didn't want to hijack the other 2 MLF threads, so Here is my question:
When do you generally inoculate with mlb?
I've got a chardonnay bucket going that is currently at 3 brix(1.012sg) my readings have been decreasing by 2-3 brix/day and i'm thinking I should probably inoculate today or tomorrow to avoid O2 exposure?
My thinking is that by the time the must goes dry the mlb will have a chance to get some CO2 going to protect my topped off carboy?
Some additional info:
Yeast: CY3079
Mlb: Enoferm beta
