    Thanks for the replies. The beer is fermenting vigorously now, so I guess all is well. Still no activity in the airlock, but the lid is bulging, so there is a lot pressure.

    I use Kenridge Classic wine kits and the end product is superb! Tried the cheaper kits, but they are not worth the effort. You get what you pay for as they say.

    Hello, My kit wine has reached its target gravity of 0.995. The lowest I have got from these particular kits has been 0.994. I have to go away for the weekend. Is it worth me leaving the heating belt switched on? The belt is not thermostatic, so is always on. Thanks in advance.

    Hi Kim, Castor sugar is just more finely ground than the regular cane sugar. Some say it just dissolves more easily in the mix. Whether this makes a significant difference, I just don't know. Castor sugar is not as finely ground as icing sugar - that's really finely ground.
