RJ Spagnols Dashwood New Zealand Pinot Noir

Good choices. My only other recommendation now on the Dashwood is to not rush the stabilizing step, and do extended bulk aging after stabilizing and racking off the lees. I personally like oak so I bulk aged on a little french (med toast) cubes for a good 3 months.

RJ Spagnols Dashwood New Zealand Pinot Noir

Tank, I dont know about your other 3 choices there, but I can tell you that the Dashwood is extremly good!! I made this kit in late march or early april 2007 and I'm going to have to have my wifehide a few bottles from me so we can have some with better age on it someday

    Mosti Mondiale Cab or Amarone?

JMHO, Amarone is too sweet for me. I'm like you, I like Cab's and Merlots best. Working on a Barolo kit now so it will be a year or two before I can say on that. My suggestion would be to look at an En Primeur Cab. It is a premium kit with a real nice crushed grape pak. I have made 2 of...

    WineXpert Second racking necessary?

well, it really started when my wife wanted to have a wine tasting party for a group of her friends to be held in Dec, 2007, so I made some 16 different island mist and orchard breezin kits.Ferminting 8 at a time. The funny thing is when Dec. came we had a huge ice storm and Tulsa was out of...

    DAP...PRICE INCREASE

Urea has gone throught the roof too. I just bought 2 ton of 28-13-13 friday and fell over in shock when I got the bill for $1668 for 80 50# bags Thats up 100% from what I paid in Nov 2007 thanks to DAP and Urea. Its real scary to think of what this will do to food prices later this year!!

    Working on my first batch....

Hey X, I also strongly recommend using a MityVac or similar vacuum pump also (after drill stiring). I use a 18vlt high speed cordless drill and agressivly (reversing directions often) stir 3-5 times a day for 4-6 days depending on brand of kit. Each time when I'm done degassing, I just...
