    Racking

    I recently brewed a Brewers Best Wiezenbier and recently racked it to the secondary fermentor. There is still quite a bit of sediment on the bottom. Is it OK to rack again? Also, the color of the beer is quite dark. I was expecting it to be lighter since the gentleman told me it's a weiss bier.

    Brew Pot ???

    I was given a 40 qrt stainless steel pot that I plan on using for a Brewer's Best Weizenbier kit that yileds 5 galllons. Is this pot too big as there is more surfacr area that may effect the boiling procedure?

    Primary Fermentation

    I started the WE Sav. Blanc 12 days ago. The SG moved very little as of day 5. Unfortunately, I'm out of town until Friday. Are there any issues with fermenting that long? I will be able to switch to the carboy Saturday if the SG is good then.

    Piesporter bottling

    First time bottling yesterday and things went well....no mess! When bottling with the spring valve, as the liquid entered the bottle, air bubbles formed until the wine was deep enough...is this OK or will this cause oxidation? I added the crushed camden tablets the night beore and mixed.

    Just started the WE NZ Savignon Blanc last night. Once the lid has been snapped tight on the fermenter, does the air lock need tobe inserted or is OK with leaving the hole open in the lid?
