    My Condolences to you all.

I'm sorry to hear of your recent troubles in Boston and elsewhere, I shan't dwell on them but just to say I'm sorry to hear on the news of your recent troubles. My thoughts are with all Cheers, Tony.

    What a shocking year!

What a shocking year this side of the pond. I walked along the canal towpath making my way to my favourite crabapple tree and stood back horrified! NO crabapples at all, I don't mean fewer than normal, none at all. I had to fall back on brambles for the pectin needed in my plum jam. Walked...

    T.V. programme, "Man Verses Food."

Watching this chap taking on a load of different food challenges. From humungous burritoes (whatever they are) to stinkingly hot chicken wings to gallons of milk shakes. One thing that I'de like to know, when we see the cafe preparing pork spare ribs, what is this brown powder everyone seems...

    What did you colonials think?

Of the Diamond Jubilee of Queen Elizabeth II ? Pity about the weather, but then it is Great Britain. In my opinion the British Broadcasting Corporation - B.B.C. did a rubbish job at informing you as to what was going on. Far too many 'young' presenters not taking the trouble to research the...

    Mango and Papaya !

Checked the recipe list but no joy. Mangos and Papaya are 'cheap as chips' down the vegetable market at present. Anyone got a suitable recipe using the fruit and not canned or juice? Cheers and thanks in advance. :p Tony. :a1

Another request for a 'cranky' recipe.

My old Dad made some wine from the flower heads of the herb Salad Burnett, I believe the latin name is "Sanguisorba officinalis". It had a very dark crimson flower head. Anyone out there got a recipe? Cheers, Tony.

Wine from sweet (or is it bell) peppers?

Good afternoon chaps and chappesses, just been down to the allotment and cleared out the last of our sweet, or I believe you call them bell peppers. Anyone out there have a recipe for these, or tackled them as a source of wine? :ib Cheers, Tony.

    Need advice.

Picked 16 lbs of brambles (and have the scratches and nettle stings to prove it), 4 lbs extract is already as juice and another 4 lbs on the go as we speak, this is to make bramble jelly. This is using the ordinary simmering method, not steam extract. That leaves me with 8 lbs of...

    Clarification on carboys.

Good afternoon peoples, I keep reading references to carboys. Are these the ten gallon (aprox) glass bottles that are nestled in straw within a steel cage or frame? I remember in my youth they were always in a corner of comercial garages storing battery acid. Cheers, Tony.

    Town and city names.

Is there a website where I can look up the explanation of American town and city names? I know we Brits have some wierd ones, I mean Piddle Hinton, Sixpenny Handley, Sour Milk Ghill and the place where I was born Longcleughside but you lot have some real crackers! :slp Cheers, Tony.

    Damson juice by steamer.

I'm concidering extracting damson juice by using a steam juice extractor, I'm a bit concerned the rich red colour/color! from the skins may not come through. Am I concerned about nothing? :rn Cheers, Tony.

    Not quite a beginner. . . BUT.

Still making the occasional basic silly mistake. Just made a foxes paw (French y'know). I'm making Damson wine from fresh fruit and I've added cold water to the crushed fruit also the Pectin destroying enzime and the cambden tablets, the recipe asked for boiling water to be poured over the...

Damsons the size of sloes ! ! !

Just got back from the Sheep Drover's track with this years damsons. 56lbs and I've never seen them so small. I don't know if 'those in authority will allow this Anglo Saxon word, but I'm knackered ! :( I've seen bigger sloes! I'll put it down to the weather, might read up on pruning...

    Steaming Elderberries !

Can I leave the elderberries on the stalks if I'm extracting the juice by using a steam juice extractor ? Anything that saves me from that labourious job is a winner with me. :D Cheers, Tony.

    Steam extraction of elderberry juice.

I've been reading with interest a few communications on the subject of juice extraction by steam, in particular using this method on elderberries. Normally I gather elderberries, select a film on the box and just gently rub away to remove the berries from the stalks, (I've found using a kitchen...
