Hi Matty. If you put capsules on your wine bottles be aware these will need the larger size. The standard will not fit these bottles. :-)

I also use heating pads. I just tie them on the side of the bucket or carboy with a scarf. I use low heat and my pads turn off at about 10 hours so there is no chance of overheating.
If anyone is interested, finevinewines.com still has the OB cran-apple chard kits in stock. Just ordered a few to make for Christmas next year. I made this kit and gave as gifts for the holidays and everyone had great things to say about this one.
Basically Port is a wine fermented to about 16-18% ABV and can be fortified with spirits to get an ABV of up to 20% or so. Usually it's dessert wine hence all the flavored kits available.
RJ Spagnols kits are straight forward. Sanitize equipment. Add juice bag. Stir in bentonite. Check specific gravity. Sprinkle yeast. Cover and allow yeast to do its job. When must reaches the specified specific gravity stabilize and clear. Then bottle. Hope this helps.

Took your suggestion and ordered this kit Tuesday from FVW. It's to be delivered today. One question.....is this kit sweet compared to the RJS port wine kits? I'd rather not have such a sweet wine. If its similar to a Reisling then I'm okay.
