    I also use heating pads. I just tie them on the side of the bucket or carboy with a scarf. I use low heat and my pads turn off at about 10 hours so there is no chance of overheating.

    I also use masking tape, the blue painters type. So easy and little adhesive residue left behind.

    If anyone is interested, finevinewines.com still has the OB cran-apple chard kits in stock. Just ordered a few to make for Christmas next year. I made this kit and gave as gifts for the holidays and everyone had great things to say about this one.

    Packlab Cornucopia Raspberry Merlot -- anyone try?

    Sweet fruity. Next time I will add more of the F-pack to the primary. I like the fruit taste but not as sweet. Nice by the pool summer sipper as is.

    Don't know. I made it and added half the f-pack to primary fermentation. It tasted like a raspberry flavored sangria.

    RJ Spagnols Port Wine Preorder time again

    Basically Port is a wine fermented to about 16-18% ABV and can be fortified with spirits to get an ABV of up to 20% or so. Usually it's dessert wine hence all the flavored kits available.

    RJ Spagnols kits are straight forward. Sanitize equipment. Add juice bag. Stir in bentonite. Check specific gravity. Sprinkle yeast. Cover and allow yeast to do its job. When must reaches the specified specific gravity stabilize and clear. Then bottle. Hope this helps. Some of the other kits...

    What's a good wine for the Holidays,

    Took your suggestion and ordered this kit Tuesday from FVW. It's to be delivered today. One question.....is this kit sweet compared to the RJS port wine kits? I'd rather not have such a sweet wine. If its similar to a Reisling then I'm okay.

    I have made the orange chocolate port, apple tatin port, and white chocolate port kit. The orange chocolate was my fav from them. I have also made raspberry chocolate port, blackberry port and strawberry chocolate port from other kit makers. I think they are all good.

    Congrats on your first batch. So as young wines go...how does it taste? That kit is on my list that I want to try.

    Apfelwein

    If I don't degas Apfelwein will stabilization still work and can I the add brown sugar to slightly back sweeten without restarting fermentation? I would like my Apfelwein with a little carbonation and I don't care if it's cleared.
