I'm currently on day 13 of making my Selection Original Barolo kit. The instructions for the kit say to leave "most of the sediment" behind when racking but when I transferred to the secondary I used the spigot from the bucket as opposed to the siphon. I'm thinking now I may have transferred...
I didn't add the flavor pack until near the end as the instructions stated. I followed the directions well, but there are a couple things that are bothering me now. At one point I was told by a few peoplethat if I liked the taste of my tap water (well water)I could use that...so I did; however...
Thanks Wade. It's good to know it's likely going to be fine. I have no problem letting it sit for however long is needed; however, I will need to buy another carboy so I can start another batch. I guess this is what it's like when you catch "the fever", huh?

Tonight I'm going to keep the lid on but not as tight. Just kidn laying it on there as George...

I put the lid on the bucketand attached an airlock and when I woke up this morning there was...
Hey guys,
I'm new to wine making and the forum and this is my first post. I started my first batch of wine last night and realized when I woke up this morning that the temp of the wine dipped down to as low as 63 degrees F during the night. So far there has been no signs of fermentation and...
