    Adding flavor to wine

    My 12 gallons of Niagara wine have very little flavor. Probably because I had to use a lot of acid reducing crystals to get the acidity into range. What can I add to it to increase the flavor? I was thinking of frozen juice concentrate. Will it work? Will it cause it to ferment again?

    filters Are there any filters available for the whole house filter that are less than 1 micron rating? The Bon Vino Mini-jet super sterile is rated at .5 micron. I have not been able to find a whole house filter cartridge that has a rating less than 1.

    malolactic fermentation

    I always top mine off when it is going through malolactic fermentation or any time. Do not add any sulfites during fermentation and do not use potassium sorbate as a preservative when you bottle. It will badly effect the taste.
