I recently purchased the RJS BC Meritage kit. It includes 2 kinds of oak, elderberries, Wine skins , and a gauze sock. My questions are, Do I place all the dry ingredients into the sock or just the dried fruit? Do I sprinke the yeast on the must before or after putting the bag in? Thanks...

IMO most anything is step up from this. RJS Cru are nice kits. Heron Bay are good too.

Bought a couple of kits the other day, a chardonnay that has one yeast packet, and a port kit that has two. I was wondering why some kits have more packets than others and is it possible to add too many packets? Thanks Doug.

Change yeast I had trouble with EC1118 dated 2009, from another kit manufacturer. I bought another packet and pitched it in after 2 days of inactivity. Fermentation started right away and the wine (Bergamais) turned out fine.

I will be ready to bottle my first batch of red wine in the next 7-10 days. I have made batches of white and blush wines and filtered them before bottling to get the "polished" finish, and was wondering if there would be any noticeable advantage in filtering a red wine? Thanks Doug
