I am at the stabilising and clearing stage for this kit and I have a question.
I'm used to racking a wine before stabilising but the instructions for this kit have a big note to NOT rack before stabilising, and that the sediment must be stirred back into suspension.

I recently purchased the RJS BC Meritage kit. It includes 2 kinds of oak, elderberries, Wine skins , and a gauze sock.
My questions are,
Do I place all the dry ingredients into the sock or just the dried fruit?
Do I sprinke the yeast on the must before or after putting the bag in?

Bought a couple of kits the other day, a chardonnay that has one yeast packet, and a port kit that has two.
I was wondering why some kits have more packets than others and is it possible to add too many packets?

Change yeast
I had trouble with EC1118 dated 2009, from another kit manufacturer. I bought another packet and pitched it in after 2 days of inactivity.
Fermentation started right away and the wine (Bergamais) turned out fine.
I will be ready to bottle my first batch of red wine in the next 7-10 days.
I have made batches of white and blush wines and filtered them before bottling to get the "polished" finish, and was wondering if there would be any noticeable advantage in filtering a red wine?
