It's that time of the year....Neighbors lock their cars when they park in your yard in fear of you filling it with garden produce...mostly large Zucchinis.

So what to do with that steady supply?????
Zucchini Bread...freezes well and tastes great.

~~~~~~~~~~~~ZUCCHINI BREAD~~~~~~~~~~~~~~

BEAT:

3 EGGS
2 CUPS SUGAR
3 tsp VANILLA
1 CUP OIL

ADD:

3 CUPS FLOUR
1 tsp SALT
¾ tsp BAKING SODA
1 tsp BAKING POWDER
3 tsp CINNAMON

BLEND:

3-4 CUPS GRATED ZUCCHINI
1 CUP CHOPPED WALNUTS [or other]
1 CUP RAISINS

SPOON INTO GREASED BREAD PANS.

BAKE: 350* TILL DONE....50 MIN TO 1½ HOUR.....
DEPENDS ON SIZE OF PANS

Another great zucchini recipe and time saver is to take large zucchini, cut in half and clean out the center (hollow it out). Partially steam cook the zucchini just to soften, DO NOT COOK IT!

You can stuff the zucchini and freeze it for later cooking in the oven. Things we stuff our with:

Meatloaf
spanish rice
a mixture of Rice, chicken and mushroom soup.
Spanish scrambled eggs

and many other things

That sounds like a winner....Spanish Rice.....Yummy!!!!
 
That does look very good..yum....I think I can just about smell it from here....Now I'm hungry, will need to go get something to eat...
