It's that time of the year....Neighbors lock their cars when they park in your yard in fear of you filling it with garden produce...mostly large Zucchinis.
So what to do with that steady supply?????
Zucchini Bread...freezes well and tastes great.
~~~~~~~~~~~~ZUCCHINI BREAD~~~~~~~~~~~~~~
BEAT:
3 EGGS
2 CUPS SUGAR
3 tsp VANILLA
1 CUP OIL
ADD:
3 CUPS FLOUR
1 tsp SALT
¾ tsp BAKING SODA
1 tsp BAKING POWDER
3 tsp CINNAMON
BLEND:
3-4 CUPS GRATED ZUCCHINI
1 CUP CHOPPED WALNUTS [or other]
1 CUP RAISINS
SPOON INTO GREASED BREAD PANS.
BAKE: 350* TILL DONE....50 MIN TO 1½ HOUR.....
DEPENDS ON SIZE OF PANS
