"Zesting" a Reisling

I'm intregued about the Grapefruit zest in a Reisling? In a previous thread it was mention it wouldn't change it, but enhance it. I currently have a 5 gal carboy Regina Juice which I've chosen to leave dry (I don't care for sweet wines). Is it ever too late to try this? right now it's been bulk aging since November. How much grapefruit zest would you put in (per gallon). I'd like to revisit this topic for everyone.

Joe (joeswine) is the guy who really knows about zesting. This post should put this thread back on top, so he will see it.
 
I'm also playing with my riesling. Made a heck of a mess when I tried to zest my raspberries, Any ideas's? LOL Ok so the zesting is a bit crazy, but I am making a raspberry wine just for blending with my riesling.
