I have been making my wine in 1 gallon carboys. I have been using an entire pack of yeast. Could this be the reason for a taste I can only think maybe a yeasty taste? I am sanitizing with star San and sterilizing in the oven. I am an OR nurse so I understand sterile technique. My wine is come out very strong in flavor and alcohol even though PSG is only 1.100. Suggestions please

Sp of 1.100 will give you an ABV of 14%, depending on what type of wine you are making 14% could be a strong alcohol taste. The yeasty taste is probably coming from a young wine. How long are you aging before you are drinking?
 
Agree with all the above. Probably either the wine is young or the higher ABV. It is not the use of the yeast in 1 gal. carboys, as I do that quite often and don't have yeasty tastes.

What type of wine is it?
 
A mead takes more aging than a wine, I won't touch that til it was a year old.
 
Meads are like regular wines- it needs time. age and then age a bit more! ;)
