I have only made wine from kits and as you all know everything has always been pre measured. I am looking at making a couple of batches from juice(5gallon pail sold at wine stores). What do I test or how do I determine what additives and how much of each.
 
From my limited experience with frozen juice buckets, they've been pH balanced with yeast added. I'd still check the pH. I'd add any oaking material, some yeast nutrient, some crushed grape or grape skins of the same variety you are making.

Make sure to put an air lock on your frozen juice bucket. You can buy a rubber washer that will fit an air lock. Drill a hole in the top of the juice bucket, fit the rubber washer, and incert air lock.
