WineXpert Wine Expert Selection Sauvignon Blanc

Starting my first kit wine this weekend. Hope it goes well. Any advice or tips from the pros? I plan on using QA23. Not even sure what yeast they provide with the kit.

Hi Chasemandingo;
The Selection California Sauvignon Blanc kit comes with EC 1118 yeast. We chose that for many of our white wines because it is reliable, has good alcohol tolerance, good temperature tolerance, and has very minimal impact on the flavor profile of the wine, allowing the varietal characteristics of the grapes to be the stars.
Experimenting is one of the enjoyable and rewarding aspects of winemaking, so by all means try different yeasts. I would recommend making the wine as it comes first time, since our Quality Assurance folks put a lot of time and research into developing our wine kits, then if you think it needs tweaking...
