Im looking at making wine, fruit wine, and beer. What chemicals am I missing that I should add to my order before its to late?

So far im getting:
-Acid Blend - 2 oz.
-Wine Tannin
-Potassium Sorbate
-Campden Tablets (potassium metabisulfite)
-Pectic Enzyme (powder)
-One Step (cleaning)

I would skip the One Step and the Camden tablets. Get a 1lb of Potassium Metabisulfite instead. You can use that to sterilize and protect the wine. It comes in a powder so no crushing needed. It's quick to dissolve as well.

I also have a wine thief made for hydrometers which I like. Seems easier than using 2 things - wine thief and then a jar for the hydrometer.

Not sure what the mini corker is but a floor corker is what you will be wanting soon enough.

Personal preference on the airlock. I like the 2 piece S curve one better than the 3 piece.

+1 to everything Rob said. I'd be interested in knowing what kind of wine thief you have. Mine works just okay with the hydrometer but it seems to hug the sides of the thief making it difficult to read accurately.
 
Its the Fermtech Wine Thief. It goes for $6-12. If you hold it at the top and spin the hydrometer it works well. Easy to empty and clean.
 
I agree about skipping the campden tablets. Use powdered Kmeta.

You will want to add items as you go. It's not likely you will get everything you will ever need the first time.
