I just ordered two of the 96oz. cans of Blackberry concentrate to make a couple of batches of Blackberry. All of my equipment is for 5-gallon batches (6-carboys). Should I use 2 of the 96oz. cans for the 5-gallon batch? I would like a fuller bodied wine. If there is any way to get by with 1 can and add fresh Blackberries please let me know how much for the 5-gallon batch. Thanks for any tips, Lynn
 
Hi Lynn, and welcome to the forum.


Use 1 can for 3 gallons or 2 cans for 5 or 6 gallons. If using 1 can for 5 gallons and also supplementing that with fresh berries, I would use 10 pounds, mashed, and put it all into a fine mesh straining bag. To get maximum juice extraction, freeze the berries for a couple weeks minimum first, and use plenty of pectic enzyme.
