My brother Rocky is concerned about his wine. He is using a Winexpert Sangiovese wine kit. His reading was .0996 Sunday March 12, 2017. He proceeded to add the metabisulphite and sorbate and used the wine whip as directed along with the pack of Chitosan with another two minutes of whipping. It is to sit for another 14 days to clear. His wine now has a sponge like sediment floating on the top. Is this a cause for concern? I will attach a photo.
