Top up question

I topped up my valpolicella last night but only had enough wine to fill the carboy about 2 1/2"'from the bung give or take, should I get another bottle to top it up more or will it be ok for a couple days til I can get back to a liquor store that sells valpolicella? Thanks!!

Did you add K-Meta when you racked over? If so, you are probably fine - and it's more about how much surface area is exposed, so if the wine is up to the neck of the carboy where it's nice and narrow you are also probably fine.

Yes I did add kmeta. It's a little below the narrowest part of the neck. I know I can add water but I don't want to add anymore water than I already have.

I wouldn't worry about it then -just add the valpolicella withina day or two and enjoy the rest of the bottle yourself.

I agree, sounds fine for a few days but just dont leave it like that for months.
