Hi everyone,

I have an RJS Winery Series Supertuscan (which I've heard is amazing). I stabilized and cleared. According to the instructions, you're supposed to wait 2 weeks, then bottle. I've actually waited about 8 weeks, mainly because of laziness. I've never kept a kit on lees for that amount of time. Will I run into any off flavours or any other problems?

If it is clear and there isn't a lot of sediment, like less than 1/10 on the bottom, you should be fine. Many of us bulk age wine and there usually is a little sediment, but that shouldn't hurt anything.

Yeah, it's clear, and there's just a normal amount of sediment. I bet it's pretty compact by now.

I figure it's good that it's not a WE kit, where you don't even rack after secondary fermentation. I plan on bottling today...it's been too long!
