Its been 6 months or so since my last kit but this always happens to me when my wine is finished. I do not have time to immediately bottle my wine before I get into drinking it. Will I do damage to my wine if I steal a bottle or two from the carboy? My concern is leaving air space in the carboy before bottling the wine. This time around I only plan on stealing from the carboy 4 days before bottling.

Thanks

Steve is right, filling the headspace is best. However, 4 days isn't too long, so the risk while real, is low. Just don't get lazy!

You could also get a bottle of inert gas. They come in are sold cans at wine shops. Good for short periods.
