Hi everyone,

I would like to learn if there is a risky when adding SO2 into the wines after racking of the barrels instead of before racking?

Don't wait too long. Barrels breath. You'll oxidize that wine in a hurry. sulfite a will also protect your wine from any microbes.
 
I can't think of any risk to adding meta to barrels, most of us add meta during the course of barrel aging due to the amount of oxygen that permeates across the barrel wall.
just make sure that the meta is diluted and that you can gently stir it into the wine.
