I just started the kit and noticed tan crystals left behind in the bag after emptying the juice in the primary. The juice appears brown and the date on the kit was August, 22, 2013. I could not get the crystals to dissolve in hot water. Anyone know what this could be?
 
Could be some tartaric acid dropped out of the juice due to cold weather this time of year. Brown juice is a very normal color for a white wine believe it or not. I would proceed as normal and just smell the juice for any off orders and then give it a taste after you have it all ready for yeast, again just looking for any off taste.
 
I made this kit last summer. While I had not crystals, the juice was certainly brownish.
 
I'm liking it so far. It was barrel fermented and had a good amount of oak early on, but that has fallen back and I'm enjoying it more.
