I took everyone's advice and I'm going to do this one by the book. I used the oak shavings and the yeast that it came with. I figure, why mess with a system that works. I love having all this good advice from all of you. It gives us new guys some confidence knowing that we're not alone here. Thank you all for caring.

Just an update. Stir the lees and give the grapes a squeeze every morning. Start SG was 1.086 on sun. SG currently is 1.020. The house defiantly smells like a winery. Lol.
