Hello, this is to caveat on the addition of tartaric acid addition.... When I fortified my wine kit i used an online calculator to come up with the equation.

The online calculator stated that I should add approximately (2) 1.5 liter bottles of Vsop plus (1) 750ml bottle of Vsop. This seems like a lot of alcohol. Could this be part of the reason why my port tastes off?

So my theory is to split the batch into 2, 6 gallon carboys. I will then add maybe a bottle of cab sauv or petit verdot. Then top of with :mny a commercial port..


Thoughts?
 
The calculator is accurate. It takes about (1) 750ml bottle of Brandy for each gallon of finished wine to raise it from ~15% ABV to 19% ABV. Brandy is pretty much pure ethanol and water, their is still a small amount of acid in brandy but not much.
