Hello All,


I am leaving for vacation on July 5th. At that time I should have my port transferred into the secondary and completed the stablising and cleaing steps that I need to do. It is suppose to sit in the carboy for 14 days but I will be on vacation. Is it okay for the wine to sit for 22 or 23 days before I bottle?


Do I need to move it from the kitchen table to basement where its cool?

It's stable and clear so you could leave it there for 3 months then bottle, so a few weeks will be just fine.


I would place it the basement where hopefully less temp flucuation. Be careful transporting!!!
 
The port will be fine with a bit of extra aging in the carboy. How hot will it get in the kitchen? As long as there is not a big change in the temps you can leave the port right where it is, waiting for you to return. Have a nice vacation.
