Last week, my older brother and I purchased some really cheap juice buckets. This was our Christmas gift to our younger brother.
I bought 1 bucket of chennin blanc and 3 buckets of a grape I never heard of. I am having a senior moment here, the name escapes me, apparently it is an Italian varietal.
Fermented it at the brothers house. Brix was 24. PH has already been adjusted to a nice 3.4. Added yeast nutrient in 3 stages. Fermented to dry and did the first racking yesterday.
Ended up with 22 gallons of white. Taste was rather sharp, but it did have some nice flavor. Rather surprising for left over bucket juice.
Final cost was (excluding additives like yeast, etc) was around $6.50 A GALLON!!!
