When bulk aging a Mosti product, they instruct to wait on the addition of Sorbate until right before bottling.


I am trying to learn more.......What is the thinking behind not adding the sorbate until say 9 months after aging? Does it matter if it is added sooner? Mosti makes a special point in their instructions not to add the sorbateuntil bottling if bulk aging a wine.
 
Trub, I think Nino talked about that at Winestock. The idea is that they want the full strength of sorbate at bottling. If added earlier the sorbate either breaks down or gasses off, reducing the strength at bottling. When added just before bottling, any yeast or bacteria contamination picked up diring bottling will be inhibited in the bottle until the yeast or bacteria die of old age.
