How have you determined that MLF is complete? Did you do a chromatography, and if so when? Usually I leave a wine go a few weeks after a chomatography test shows completion since it only shows acid levels above 30ppm for malic acid.
If MLF is truly done, I'd adjust pH acid if needed (by taste), let them rest after adjustment for a few weeks, then blend, using bench tests to determine the best blend, once again using your taste buds.
Yes, i have tested it. it is complete... I actually waited an additional 3 weeks or so since the last MLF test. So I should leave it further? I actually have a Vinmetrica test kit that I picked up this fall so I can perform an accurate test on TA/PH/So2
My concern is with So2. I am assuming the wine has little or no free so2 since I have not added any. Should I not be adding some very soon since it is unprotected? The wine is sitting in a 61F environment right now... my oak staves are also still sitting in the demis since Oct 15 or so.

Yes, it's time to get them sulfited. You can decide by taste when it's time to get the wine odd of the oak.
