Hi, making some wine from kit, on day 18 it calls for adding Metabisulphite. I understand this stabilizes the wine, - is it necesary or are there possible substitutes. My wife has a low tollerance to sulphites and I am not crazy about them. We have already added it but for future batches I wud like to avoid it.

here's a couple of questions for you...

1) do either of you have asthma?
2) do you drink a variety of commercial wines?

If you don't have asthma, then probably the amount of meta from a wine kit will not bother you.

If you drink a variety of commercial wines, then the amount of meta in a kit wine will not bother you.

AFAIK, there is no acceptable substitute for meta. It is necessary to give the finished wine shelf life. If you are sure that the wine will be consumed quickly, then you can leave it out at the risk of your wine oxidizing.

re-reading my reply, I left out a sentence, so here it is...

Kit wines usually contain much less meta than commercial wines.
