I need to move my aging stock indoors or deeper underground. In winter here we get minus degrees in the deep cellar and my only other option is the back bedroom that has no central heating. Its pretty stable all year round but never gets colder than 12 centigrade, even in mid winter or high summer.

My question is would storing my finished wine in a big wine rack in my back bedroom destroy it or ruin the finished polished wine which is in bottles. The aging demijohns full of young wine can stay downstairs in the cold till I bottle them.

what is the temp that wine spoils, does anyone know

Spoilage of wine is more dependent on the wine's stability (PH and level of SO2/kmeta).

I am not saying that the wine at 100f degrees is ideal or in any way good for wine, but as long as the temp remains fairly consistent you should be fine.
