This is my first time with a MLF. The Merlot looks good but how about the Cab Sauv?

These are from grapes that I got from Wine Grapes Direct, and I want to make sure I don't rush things.

It looks done. Maybe a little left in the Cab. Give it two weeks - the chromatography can miss small amounts of Malic acid.
 
It is done.... I do not believe you will be able to get that trace to disappear..... You don't want it to start eating other things.... I would stabilize...

Looks just about done (Cab).

How about the TA? What do you look for versus the standard stain?
