I picked a couple of pounds of very ripe Isons today and did some testing on them.
PH = 3.33 / TA of .41 / SG 1.060
If everything I read is correct I should be able to do an all juice wine with this without doing any acid correction.
I am going to up the SG to 1.10 and use either Premier Cuvee or 71B on this one.
Any other suggestions are welcome
