I picked a couple of pounds of very ripe Isons today and did some testing on them.

PH = 3.33 / TA of .41 / SG 1.060

If everything I read is correct I should be able to do an all juice wine with this without doing any acid correction.

I am going to up the SG to 1.10 and use either Premier Cuvee or 71B on this one.

Any other suggestions are welcome
 
Awesome!!! Let me know how it goes! I'll be starting a Carlos muscadine wine this fall after my grapes ripen!
 
I crushed 120lbs of Isons this morning and have them macerating with sugar and Camden right now.
 
Man!!! You weren't kidding when you said that you picked up a couple of pounds! Lol
 
WOW!!!! What variety are you using? I finally found someone that sells muscadines here. I plan on making juice as well.
