I'd put those bottles in a cool, dark place and forget you made it.

I do some 375's as well, but I've made enough wine (from grapes) to leave my reds in bulk for a year, then in the bottle for 6 months.

What sized cork do you use for the 375?

I used #9, 1 1/2 for the 375s. They are a bit shorter than the #9, 1 3/4 that i use in the 750 bottles. It really doesn't matter, i just think the shorter ones look better in that smaller bottle, and you can sneak a bit more wine in them..lol. I usually use #9 for everything because they are supposed to be better for longer term storage. If you just have a small batch that will not last long i guess you can use #8.

That's going to be hard to do! It's my first batch, but I did not open a bottle this weekend. Will wait another month.
