I just wanted to know how dry it was. I was looking at this kit but thedude at our wine storedidn't have a clue if it would end up very dry or not. You had to have tasted it?
 
thanks, I should known by the GS. I have to remember that the SG does relatedirectly to the sweetness. I just don't want to make everything to represent the desert.
 
I agree, This is basically my 1st dry wine that I will leave dry. Typically I would back sweeten.
 
Anyone who has done one of these kits with the new instructions. Did
you add the k-meta and sorbate and clearing agent(SuperKleer) at the
same time as it says and I dont mean all together. It says to add
k-meta stir vigorously, add sorbate and stir vigorously and add
clarifier. I stirred and stirred with a drill mounted and went through
2 18 volt batteries doing this before I added clarifier. I will not do
it this way again. Next time I will give it many days as I do with all
my other wines. I beat the snot out of this wine but I fear that it
still has some S02 in it suspending sediment at top. I will rock it
daily to knock this sediment down until it has all fallen then rack
then vacumm degas with the mighty vac that I just bought. Beware of
this and give it more time to degas.
 
Just racked the Barolo off the sediment from clearing and topped up
with a cheap bottle of Barolo. I am very impressed with the taste of
this and AMAZED at how easy this was to degas. I did not like the idea
of doing the whole fermentation in the primary but I believe RJ
Spagnols is on to someting as this was without a dought the easiest
wine to degas ever, not that I've been doing this for a long time but I
drill mixed it for about two minutes and then hooked up the mightyvac
and pulled 25 hgs and its pretty much staying right there. It pulled a
little out for about 3 seconds and then held vac! I think I'm going to
try this with my naxt batch regardless of what the directions say of
the manufacturer. Pretty suprised at the amount of solids in this kit
for a 10 litre kit!
 
Ya know Im a dummy, I just realized why when added clarifier I had all
my sediment at the top and not the bottom. It was because I had the
vacuum bleeder on it like a dope. I dont think you should try and degas
and clarify at the same time!

Ill be tasting it this weekend as its bottling time. Its been bulk
aging for 2 1/2 months which isnt long but I have to clean out
the basement, I really have to start taking notes. I
couldnt remember when I started this kit, if it wasnt for this forum
having dates Id swear that batch has been aging for more like 5 months.

Almost done clearing out all my wines. Have to bottle and label the Gewurtz and a few small batches now.

Wade, those bottles look good, great label. How does it taste? I finally got mine started yesterday.

Pretty good to me but Im not a big red drinker so. I want to make a few
good reds for when people come over like my brother-in-law. I like it
better than quite a few reds Ive bought but never splurged for a Stags
Leap Merlot either so.
