Forgot Bentonite!

I started a RJS Brunello back on 8/24. In my haste, I forgot to add the bentonite. I completed fermentation with a final SG of .992. I racked into a carboy and added KMeta and oak cubes. Any advice?
 
Grasshopper, it sounds like you need a competient mentor.
 
You don't need the bentonite. After 2 months it's probably clarified just right. Check it out.
 
I once read about bentonite post secondary as a clearing agent. In my mind, using it early on in kit winemaking, it's just another tool to speed up the process. Bentonite is little more than clay with a (negative?) charge that aids in clearing proteins from the wine thus acting as a fining agent.

Your kit probably came with another fining agent/s to use post fermentation like chitosan or super clear. Did you add something like that at the k meta stage? Regardless, as SPAF suggested, you're on target for a fine mid winter drinker.
