I'm a few days into my Pinot Grigio......It is currently in a plastic bucket....Should I wait until its at about 1.010 to 1.020 then transfer to a glass carboy to finish it off???

Thats what I did with kits and assume that real grapes are the same.....
 
I would not recomend fermenting 100% under air lock.

During the beginning phase of fermentation (the "Growth") phase, oxygen is beneficial to yeast growth. Go the way you are going. You are doing fine!

That's what I ended up doing. @ 1.012 I gave it a stir then racked to a Carboy to finish off....

The growth phase is over in 12-36 hours , after that its fine to go under airlock. It even preserves the fruit flavours in a white .
Fermenting cool is a good idea for this too.
