Fermentation will not start

I have had stuck fermentations before but never had a
fermentation not to start. My yeast starter looked good, but 24 hours
after I added it to the must nothing is happening. What are your
thoughts on what I should do. I really hate to loose 5 gal. of
muscadine must.

Most of the time, you will notice the yeast becoming active within the first 24 hours; however, sometimes it takes up to 72 hours for the active fermentation to begin. As a result, I would wait 3 days before I tried anything.


If there is still no active fermentation within 72 hours, perform the following:


1. Take a fresh packet of yeast (Lavlin EC-1118 is a good choice as it can handle alcohol up to 18%).
2. Re-hydrate it in 1 cup of water (104-109 degrees).
2. Once it starts bubbling (about 15 minutes), add one cup of your wine to your yeast mixture.
3. Once it starts bubbling again, add 2 cups of your wine to your yeast mixture.
4. Repeat the doubling process until you have at least1 gallon of
fermenting wine.
5. Pour the fermenting wine into the rest of your wine and it should start fermenting the whole batch.
 
Also, make sure the must is at least 68*F, preferably a little warmer. I would go ahead and stir it very good now.
 
Thanks for the help. I'll wait a couple more days to see what happens.

Maybe when I go to my wine room in a few minutes it will have started.
