I picked up a pail of lodi sangiovese juice and hydrated and pitched a pack of ec 1118 am I going to have a problem this is my 2nd batch of wine and Im not sure what yeast goes with what. Can I adjust with a packet of pastuer red or should I just let it be and see what happens?

Thank You pjd I have been brewing beer for 5 years and Im familiar with there yeast strains but not wine yeast strains in brewing they always say RDWHAHB ( relax dont worry have a home brew ) I think ill do just that.

Agree with above. In future, though, remember that EC-1118 is a champagne yeast. If you were to use, say, RC212, the flavor profiles that develop will be better.

Just remember that some yeast strains require more nutrients than others, so if you don't provide them what they need, the yeast can get stressed and cause problems. The EC-1118 should be just fine, though.
