I started my kit last Sunday and it has had a vigorous fermentation all week. I checked the sg last night and it was 1.000 then this morning before I racked it(which was a little different experience) the sg was o.992 lower than directions say it should be after10 more daysuntil stabilizing time which is 0.998. Should I leave it for the 10 days? The process is moving fast. Or should I make sure it is stable at 0.992 for a couple more days then rack and stabilize. Seems like things are a 10 days ahead of schedule....I certainly don't want to rush the process as I stay very close to the instructions.....BTW it is excellent now!!!!!!

Thank you....Ramona

I would just top it up good and wait the 10 days. It won't hurt. It will be all the more stable with the lower SG.

Good job!
