I’m making wine from grapes (small batch of 4.5 gallons) for the first time and the cap hasn’t settled down even though it’s been 8 days in primary. Specific gravity is at 0.997, brix is -0.01, and it’s still bubbling a bit. Do I continue to wait for cap to settle down? Or should I rack? Maybe with a filter/muslin cloth.
Also, bottom 1/3 of the fermenter looks cloudy and I’m not sure if that should be concerning.
