Can I prune in summer?

Just got a noble muscadine and its all over the place but has one good branch that I kno ill use as the main trunk is it ok to go ahead and trim it back? Also if I could prune now do I do it before or after I plant?
 
The lit says to leave the leaves on the trunk on the 1 or 2 yr old vines, during the training season.
 
It has more than just one branch its got like ten but one is taller and more straight than others I was going to keep it but will trimming a vine in this central fl heat threaten it.

Also I have a bunch of tiny black shiny beatles all over my other vine its got holes in the leaves and black dots on the back of the leaves. Is there any sprays or any program I should follow? I only have 3 vines lol
