Well, I got 3 wines to a good start last night and tonight. 6 gal. of
hard, hard apple cider (13% PA). 1 gal. of rasberry (11.4% PA) and
strawberry rhubarb (PA to be checked once the must gets to room temp.).
I plan on carbonating the apple and bottling in champagne and beer
bottles later. I am going to be fortifing and oaking my raisin sherry
and bulk aging a few more months before bottling. I am hoping I can get
a filter before bottling time. My blackberry will be ready for bottling
in a little while also. Trying not to rush bottling but I am running
out of room in the closet for jugs and carboys. I'm slowly but surely
sliding into my wifes side and she is not very happy about it. Not to
mention her clothes smelling like fermenting wine. HEHEEHEHEE,
HAHAHAAAA. I'll keep this up to date and post pics as soon as possible.

The strawberry/ rhubarb came in at 11.4% PA. I got the yeast pitched
last night on it. The other two have been fermenting nicely since
yesterday. Everything looking great!
